Teja's Sambar Recipe

Ingredients with Measurements:
- 1 cup toor dal (pigeon peas)
- 2 cups water
- 2 tbsp oil
- 1 tsp mustard seeds
- 1 tsp cumin seeds
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 inch ginger, grated
- 2 tomatoes, chopped
- 1 cup mixed vegetables (carrots, beans, eggplant, okra)
- 2 tbsp sambar powder
- 1 tsp turmeric powder
- 1 tsp red chili powder
- 1 tbsp tamarind paste
- Salt to taste
- Coriander leaves for garnish

Step-by-step instructions:
1. Rinse toor dal and soak in water for 30 minutes.
2. Drain the water and add the dal to a pressure cooker with 2 cups of water. Cook for 3 whistles or until the dal is soft and mushy.
3. In a separate pan, heat oil and add mustard seeds and cumin seeds. Once they start to splutter, add chopped onions, minced garlic, and grated ginger. Saute until onions turn translucent.
