Stuffed Brinjal Masala Recipe

Ingredients with Measurements:
- 6 small brinjals (eggplants)
- 1 cup of chopped onions
- 1 cup of chopped tomatoes
- 1 tbsp of ginger-garlic paste
- 1 tsp of cumin seeds
- 1 tsp of coriander powder
- 1 tsp of red chili powder
- 1/2 tsp of turmeric powder
- 1/2 tsp of garam masala powder
- 1/4 cup of chopped coriander leaves
- Salt to taste
- 2 tbsp of oil

Step-by-step instructions:

1. Wash the brinjals and make a cross-shaped slit on the top of each brinjal. Keep aside.

2. In a pressure cooker, heat oil and add cumin seeds. Once they start to splutter, add chopped onions and sauté until they turn golden brown.

3. Add ginger-garlic paste and sauté for a minute.

4. Add chopped tomatoes, coriander powder, red chili powder, turmeric powder, and salt. Mix well and cook until the tomatoes turn mushy.

10. Let the pressure release naturally.

11. Once the pressure has released, open the lid of the pressure cooker and sprinkle garam masala powder and chopped coriander leaves on top of the stuffed brinjals.

12. Serve hot with rice or roti.
