Serundeng Tofu Stir-Fry Recipe

- 1 block of firm tofu, drained and cut into small cubes
- 1 cup of grated coconut
- 3 shallots, finely chopped
- 2 garlic cloves, minced
- 2 red chilies, finely chopped
- 1 tsp of tamarind paste
- 1 tsp of palm sugar
- 1 tsp of salt
- 2 tbsp of vegetable oil
- 1 tbsp of soy sauce
- 1 tbsp of lime juice
- 1 tbsp of chopped cilantro

Step-by-step instructions:
1. Heat a non-stick pan over medium heat and add the grated coconut. Stir constantly until the coconut turns golden brown. Remove from heat and set aside.
2. In the same pan, heat the vegetable oil over medium heat. Add the shallots, garlic, and red chilies. Stir-fry until fragrant.
3. Add the tofu cubes and stir-fry until lightly browned.
4. Add the tamarind paste, palm sugar, salt, and soy sauce. Stir-fry for another 2-3 minutes.
5. Add the toasted coconut and stir-fry for another minute.
6. Remove from heat and add the lime juice and chopped cilantro. Stir well.
