Salted Caramel and Pecan Maids of Honour Tart Recipe

Ingredients with Measurements:
- 1 sheet of ready-made shortcrust pastry
- 100g unsalted butter, softened
- 100g caster sugar
- 2 large eggs
- 100g ground almonds
- 1 tsp vanilla extract
- 1/4 tsp salt
- 100g pecans, roughly chopped
- 150g soft caramel
- Sea salt flakes, to taste

Special equipment needed:
- 23cm tart tin
- Baking beans
- Electric mixer or whisk

Step-by-step instructions:
1. Preheat the oven to 180°C/350°F/gas mark 4.
2. Roll out the shortcrust pastry and use it to line the tart tin, trimming off any excess. Prick the base with a fork and chill in the fridge for 30 minutes.
3. Line the pastry case with baking paper and fill with baking beans. Bake for 15 minutes, then remove the beans and paper and bake for a further 5 minutes until the pastry is lightly golden. Set aside to cool.
4. In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the ground almonds, vanilla extract, and salt.
5. Fold in the chopped pecans, then spoon the mixture into the cooled pastry case.
6. Drizzle the soft caramel over the top of the mixture, then sprinkle with sea salt flakes to taste.
7. Bake for 25-30 minutes until the filling is set and golden brown.
8. Allow to cool in the tin for 10 minutes before transferring to a wire rack to cool completely.
