Salmon Skin Maki Recipe

Ingredients with Measurements:
- 2 cups sushi rice
- 2 cups water
- 1/4 cup rice vinegar
- 2 tablespoons sugar
- 1 teaspoon salt
- 4 sheets of nori
- 1/2 pound salmon skin, cooked and crispy
- 1 avocado, sliced
- 1/4 cup mayonnaise
- 1 tablespoon sriracha sauce
- Soy sauce, for serving
- Wasabi, for serving
- Pickled ginger, for serving

Special equipment needed:
- Bamboo sushi mat
- Sharp knife

Step-by-step instructions:

1. Rinse the sushi rice in cold water until the water runs clear. Drain the rice and place it in a pot with 2 cups of water. Bring the water to a boil, then reduce the heat to low and cover the pot. Cook the rice for 18 minutes, then remove it from the heat and let it sit for 10 minutes.

2. In a small saucepan, combine the rice vinegar, sugar, and salt. Heat the mixture over low heat until the sugar dissolves. Remove the pan from the heat.

3. Transfer the cooked rice to a large bowl and add the vinegar mixture. Use a wooden spoon to mix the rice and vinegar together until the rice is evenly coated. Let the rice cool to room temperature.

4. Place a sheet of nori on the bamboo sushi mat, shiny side down. Wet your hands with water and grab a handful of rice, about 1/2 cup. Spread the rice evenly over the nori, leaving a 1-inch border at the top.

5. Spread the mayonnaise and sriracha sauce over the rice. Add the crispy salmon skin and avocado slices on top.

6. Use the bamboo mat to roll the sushi tightly, starting from the bottom edge. Use your fingers to press the roll firmly as you roll it up. Wet the top border of the nori with water to seal the roll.

7. Use a sharp knife to slice the roll into 8 pieces. Repeat the process with the remaining ingredients.

8. Serve the salmon skin maki with soy sauce, wasabi, and pickled ginger.
