Oroblanco and Coconut Rice Recipe

Ingredients with Measurements:
- 1 cup of white rice
- 1 can of coconut milk (13.5 oz)
- 1 cup of water
- 1/2 teaspoon of salt
- 1 Oroblanco grapefruit
- 1 tablespoon of olive oil
- 1/4 cup of unsweetened shredded coconut

Special equipment needed:
- Medium-sized saucepan with lid
- Zester or grater
- Citrus juicer

Step-by-step instructions:

1. Rinse the rice in a fine-mesh strainer and set aside.
2. In a medium-sized saucepan, combine the coconut milk, water, and salt. Bring to a boil over medium-high heat.
3. Add the rinsed rice to the saucepan and stir. Cover with the lid and reduce the heat to low. Cook for 18-20 minutes or until the rice is tender and the liquid has been absorbed.
4. While the rice is cooking, zest the Oroblanco grapefruit and set aside. Cut the grapefruit in half and juice one half.
5. In a small skillet, heat the olive oil over medium heat. Add the shredded coconut and cook, stirring frequently, until golden brown. Remove from heat and set aside.
6. Once the rice is done cooking, fluff it with a fork and stir in the grapefruit zest and juice.
