Ndolé (Spicy Peanut Stew) Recipe

Ingredients with Measurements:
- 2 lbs. of chicken thighs, boneless and skinless
- 1 cup of peanut butter
- 1 cup of chopped kale
- 1 cup of chopped spinach
- 1 cup of chopped collard greens
- 1 cup of chopped bitter leaves

- 2 tbsp. of vegetable oil
- 1 tbsp. of tomato paste
- 1 tbsp. of paprika
- 1 tbsp. of cumin
- 1 tbsp. of coriander
- 1 tbsp. of ginger, grated
- 1 tbsp. of salt
- 1 tsp. of black pepper
- 1 tsp. of cayenne pepper
- 6 cups of chicken broth
- 1 cup of roasted peanuts, chopped
- 2 scallions, chopped

Step-by-step instructions:

1. Cut the chicken thighs into bite-sized pieces and season with salt and black pepper.

2. Heat the vegetable oil in a large pot over medium-high heat. Add the chicken and cook until browned, about 5 minutes. Remove the chicken from the pot and set aside.
