Mushroom Tongseng Recipe

Ingredients with Measurements:
- 500 grams of fresh mushrooms, sliced
- 2 tablespoons of vegetable oil
- 2 cloves of garlic, minced
- 1 onion, chopped
- 2 red chilies, sliced
- 2 green chilies, sliced
- 2 stalks of lemongrass, bruised
- 2 bay leaves
- 1 teaspoon of coriander powder
- 1 teaspoon of cumin powder
- 1 teaspoon of turmeric powder
- 1 teaspoon of salt
- 1 teaspoon of sugar
- 500 ml of water
- 200 ml of coconut milk
- 2 tablespoons of tamarind juice
- 2 tablespoons of sweet soy sauce
- 2 tablespoons of fried shallots

Step-by-step instructions:

1. Heat the vegetable oil in a pan over medium heat.
2. Add the garlic, onion, red chilies, green chilies, lemongrass, and bay leaves. Saute until fragrant.
3. Add the coriander powder, cumin powder, turmeric powder, salt, and sugar. Stir well.
4. Add the sliced mushrooms and stir until coated with the spices.
5. Pour in the water and bring to a boil.
6. Reduce the heat and simmer for 10 minutes.
7. Add the coconut milk, tamarind juice, and sweet soy sauce. Stir well.
8. Simmer for another 5 minutes.
9. Garnish with fried shallots.
