Mediterranean Vegetable Lasagne Recipe

Ingredients with Measurements:
- 9 lasagne sheets
- 1 eggplant, sliced

Step-by-step instructions:

1. Preheat oven to 375°F.

9. Add the final layer of 3 lasagne sheets on top. Spread the remaining vegetable mixture on top of the lasagne sheets. Sprinkle the remaining 1 cup of shredded mozzarella cheese and 1/2 cup of grated Parmesan cheese on top.

10. Cover the baking dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes or until cheese is melted and bubbly.

11. Let the lasagne cool for 5-10 minutes before serving.
