Fox Grape Jam Recipe

Ingredients with Measurements:
- 4 cups of fox grapes, washed and stemmed
- 2 cups of granulated sugar
- 1 tablespoon of lemon juice
- 1 teaspoon of vanilla extract

Special equipment needed:
- Large pot
- Wooden spoon
- Food processor or blender
- Canning jars with lids and bands

Step-by-step instructions:

1. In a large pot, add the fox grapes and 1 cup of water. Cook over medium heat until the grapes are soft and the skins start to burst, about 15 minutes.

2. Remove from heat and let cool for a few minutes. Then, transfer the grapes to a food processor or blender and pulse until smooth.

3. Return the grape puree to the pot and add the sugar, lemon juice, and vanilla extract. Stir to combine.

4. Cook the mixture over medium heat, stirring frequently, until it thickens and reaches the gel stage, about 20-25 minutes.

5. To test for the gel stage, place a small amount of jam on a chilled plate and let it cool for a few minutes. If it wrinkles when you push it with your finger, it's ready.

6. Remove from heat and let the jam cool for a few minutes. Skim off any foam that forms on the surface.

7. Ladle the hot jam into sterilized canning jars, leaving 1/4 inch of headspace. Wipe the rims clean and seal with lids and bands.

8. Process the jars in a boiling water bath for 10 minutes. Remove from the water and let cool on a towel-lined surface.
