Charkassiye Kofta Curry Recipe

Ingredients with Measurements:
- 500g ground beef
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp ginger paste
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1 tsp garam masala
- 1 tsp red chili powder
- 1/2 tsp turmeric powder
- 1/2 cup breadcrumbs
- 1 egg
- Salt to taste
- 2 tbsp oil
- 1 onion, sliced
- 2 tomatoes, chopped
- 1 tsp tomato paste
- 1 cup water
- 1/2 cup yogurt
- 1/4 cup cream
- Fresh coriander leaves for garnish

Special equipment needed:
- Food processor or blender
- Large skillet or wok
- Mixing bowl

Step-by-step instructions:

1. In a food processor or blender, grind the onion, garlic, and ginger paste into a smooth paste.

2. In a mixing bowl, combine the ground beef, onion paste, cumin powder, coriander powder, garam masala, red chili powder, turmeric powder, breadcrumbs, egg, and salt. Mix well to combine.

3. Using your hands, shape the mixture into small balls (koftas).

4. Heat the oil in a large skillet or wok over medium-high heat. Add the koftas and cook until browned on all sides, about 5-7 minutes. Remove from the skillet and set aside.

5. In the same skillet, add the sliced onion and cook until softened, about 3-5 minutes.

6. Add the chopped tomatoes, tomato paste, and water. Bring to a simmer and cook for 10-15 minutes, until the tomatoes have broken down and the sauce has thickened.

7. Add the cooked koftas to the skillet and stir gently to coat them in the sauce.

8. In a small bowl, whisk together the yogurt and cream. Add this mixture to the skillet and stir gently to combine.

9. Simmer the curry for another 5-10 minutes, until the koftas are cooked through and the sauce has thickened.

10. Garnish with fresh coriander leaves and serve hot with rice or naan bread.
