Beach Plum Jam Recipe

Ingredients with Measurements:
- 2 pounds of beach plums
- 2 cups of granulated sugar
- 1/4 cup of lemon juice
- 1/4 cup of water

Special Equipment Needed:
- Large pot
- Wooden spoon
- Food processor or blender
- Canning jars with lids and bands
- Canning funnel
- Jar lifter
- Water bath canner

Step-by-Step Instructions:

1. Rinse the beach plums and remove any stems or leaves. Place them in a large pot with the water and lemon juice.

2. Bring the mixture to a boil over medium-high heat, stirring occasionally with a wooden spoon. Reduce the heat to low and simmer for 10-15 minutes, or until the beach plums are soft and the mixture has thickened.

3. Remove the pot from the heat and let it cool slightly. Transfer the mixture to a food processor or blender and puree until smooth.

4. Return the puree to the pot and add the sugar. Stir well to combine.

5. Bring the mixture back to a boil over medium-high heat, stirring constantly. Reduce the heat to low and simmer for 20-30 minutes, or until the jam has thickened and coats the back of a spoon.

6. While the jam is cooking, prepare the canning jars and lids by washing them in hot soapy water and sterilizing them in boiling water for 10 minutes.

7. Once the jam has reached the desired consistency, remove the pot from the heat and use a canning funnel to transfer the hot jam to the prepared jars, leaving 1/4 inch of headspace.

8. Wipe the rims of the jars with a clean damp cloth and place the lids and bands on top, tightening them just until they are snug.

9. Place the jars in a water bath canner and process for 10 minutes (adjusting for altitude if necessary).

10. Remove the jars from the canner and let them cool on a towel-lined countertop for 24 hours. Check the seals and store the jars in a cool, dark place for up to one year.
