Baked Boudin and Rice Casserole Recipe

Ingredients with Measurements:
- 1 lb boudin sausage, casing removed
- 1 cup uncooked white rice
- 2 cups chicken broth
- 1 onion, chopped
- 1 green bell pepper, chopped
- 2 celery stalks, chopped
- 2 garlic cloves, minced
- 1 can diced tomatoes, drained
- 1 tsp Cajun seasoning
- 1 tsp dried thyme
- 1 tsp dried oregano
- Salt and pepper, to taste
- 1 cup shredded cheddar cheese
- 2 tbsp chopped fresh parsley

Special equipment needed:
- 9x13 inch baking dish
- Aluminum foil

Step-by-step instructions:

1. Preheat the oven to 375°F (190°C).

2. In a large skillet, cook the boudin sausage over medium heat until browned and cooked through, breaking it up into small pieces with a wooden spoon. Remove from the skillet and set aside.

3. In the same skillet, add the onion, bell pepper, celery, and garlic. Cook until the vegetables are tender, about 5 minutes.

4. Add the rice, chicken broth, diced tomatoes, Cajun seasoning, thyme, oregano, salt, and pepper to the skillet. Stir to combine.

5. Bring the mixture to a boil, then reduce the heat to low and cover the skillet with a lid. Simmer for 18-20 minutes, or until the rice is cooked and the liquid is absorbed.

6. Stir in the cooked boudin sausage and transfer the mixture to a 9x13 inch baking dish.

7. Sprinkle the shredded cheddar cheese on top of the rice mixture.

8. Cover the baking dish with aluminum foil and bake for 20 minutes.

9. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.

10. Garnish with chopped fresh parsley and serve hot.
